The Wine
This exemplary 17th century estate is today run by François Servin, with the assistance of his Australian brother-in-law Marc Cameron. Together they make wines of “great elegance, purity and length” (Jefford) – from village Burgundy up to the lofty levels of this Grand Cru. The vineyards of this prized region lie, of course, 100 km north of the rest of Burgundy, which accounts for their steely edge balancing the roundness of Chardonnay. With 92 points, Bougros Grand Cru is showing very well, with good spice from some new oak. The wine will improve with age, developing a wonderful honeyed, nutty complexity. If you can’t wait, make sure you let the wine breathe or pour into large bowled glasses. Serve with your best seafood or poultry dishes.
