Ryan’s philosophy is to honour the fruit his old vineyards provide. In the cellar he encourages the grapes authentic flavours with the lightest of touches. The result is quality wines that are pure and expressive in flavour. Using only free-run juice, this Pinot Noir and Chardonnay blend is bright and fruity. Lees ageing has bought layers of complexity, and a mesmerising fine mousse from the traditional second fermentation in bottle.
