The Story Behind the Bottle
Whatever style of wine Australia turns its attention to, it manages to produce it very well and at an attractive price. And sparkling wines are no exception. Yallum Ridge does not pretend to be a Champagne substitute, but instead is an honest, fruit rich and elegant Aussie classic. It's made from the traditional blend of Chardonnay and Pinot Noir. Chardonnay brings buttery creamy texture and a little peachy fruit, while Pinot Noir adds structure and hints of red berry complexity. Consultant winemaker David Thompson has 30 years' experience in some of Australia's top wine regions. He made this cuvée for us at the Littore family cellars in Victoria. Serve chilled on its own in Champagne flutes; or with freshly shucked oysters or grilled fish.
